Recommendations for use
For germination, entire, (in 2à3 days after 1 hour soaking and regular rinsing with water), or for cooking/backing, entire or more or less roughly ground, in preparations as for cereals. However this silver buckwheat having a rather tough shell it is often better appreciated finely ground and sifted (to get away most of the shell particles). For example in mixture with wheat flour for bread, pancakes or wafers.
Precautions for use
- Kacha can be stored for a few months in a cool and dry place, in a closed packing. Complete buckwheat flour is best stored in the refrigerator or in the freezer, in a closed packing of course.
- As buckwheat does not contain gluten it is OK for people who do not support gluten. However one has to be careful because it may be contaminated by grains containing gluten, during handling or when milling.
Allergic reactions caused by buckwheat are not frequent, but the reactions caused can be severe (asthma, urticaria, anaphylaxis) and allergen identified in buckwheat are not disabled by cooking.
