Oats has the reputation of being one of the most nutritive cereals. Its percentage of proteins (12-20%) is above average and 100 g of naked oats already cover the needs for the eight essential amino acids. It also contains healthy fats, even unsaturated fatty acids, and its numerous B vitamins and contents of minerals such as calcium, magnesium, iron, manganese, silicon and zinc, are to be emphasized. Due to a starch division during ripening oat is a highly digestible cereal. In addition it improves mood because of its dopamine content, a hormone-like active agent, in the same way as for the effect of cocoa/chocolate...

Production
This naked oat is delivered by the producer to the Davert mill and there, partly because of a high content of fine dust, it is cleaned at least twice before packing.
The unhulled form increases the possibilities of germination but they can also be reduced, even annihilated, by the mechanical harvesting and the, for the protection of the users, necessary cleaning.

Recommendations for use
Naked oat suites for gratins, soufflés, pastries ... and especially for fresh cereal-paps, porridges ... but should always be freshly ground because otherwise quickly bitter.
Cooked wholegrain naked oat: wash the oat, bring it to simmer in about 2 times as much water, cover and leave on low heat for about 30 minutes.
