It is very digestible and appreciated for its high nutritional value, as its protein content is very high (12% to 18%). Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it an unusually complete food. It can for example be used as an accompaniment, for the preparation of muesli, soufflés, soups and sweet entremets.
Same as rice, quinoa is free of gluten. This makes it perfectly digestible for people who are suffering from coeliac disease.

Traditional use
Same as millet, one can eat it salted as well as sweet. It can be incorporated into soup to thicken it, or used to prepare croquettes, puddings, salads. It can also be germinated and used in a salad, or incorporated into breads, pies or other biscuits.
Recommendations for use
Bring to a boil 1 cup quinoa with 2 cups of water very lightly salted, broth or milk. Let simmer on low heat on a flame diffuser for about 45 minutes.
Precautions for use
Store in a cool and dry place, in a closed packing.
